A wonderful, fresh, versatile, seasonal dish, particularly good for this time of year. The citrus sauce gives it a unique character and personality. You have to try it!
225 g baby salad sprouts
600 g peeled prawns
2 avocados, peeled and cut into slices
2 tablespoons of chopped walnuts.
For the vinaigrette
zest and juice of 1 orange
Juice of 1 lime
Bunch of fresh basil, chopped
5 tablespoons of Olive oil
In a blender, mix the ingredients for the vinaigrette, blend the zest and juice of the orange, the juice of the lime, the chopped basil and the olive oil.
Place the salad leaves, prawns, walnuts and avocado in a bowl.
Pour the vinaigrette on top, mix well and serve.
