Prickly Pear
The Prickly Pear is an ovoid or ellipsoidal fruit with thick, spiny skin that varies in color (yellow, red, pink, etc.) depending on ripeness and variety. Its flesh is sweet, refreshing, and gelatinous, with numerous small seeds. It is high in water, fiber, sugars, and vitamins (A, C, and B), and contains magnesium, calcium, phosphorus, and potassium. It is also rich in flavonoids and betalains, compounds with antioxidant properties.
